AB - Dragon fruit is a cactus fruits that originated from Central and Northern South America. Dragon fruit
(Hylocereus polyrhizus) is widely cultivated in Malaysia, Thailand, Vietnam, Australia, Taiwan and some other
parts of the world. Dragon fruit is primarily grown for the fresh market. The fruit also has good potential to be
processed into many products, thus adding value. In order to diversify its value added products, we examined
different processing parameters for drying of sliced dragon pulp. Our results showed that the dragon fruit at
semi-ripen stage ideal for processing. Optimal parameters in production were as follows: pulp thickness in 5 mm,
drying at 55°C with air circulation at 2.5 m/sec, dragon pulp soaked in additive solution of NaHSO3 0.2% +CaCl2 0.5%+Citric acid 0.3%. Our product quality could be maintained in 6 months. Our primary study will improve
the added value of dragon fruit for Vietnamese farmers in exporting this fruit into the international market.
